Vegan Birria Tacos with Consume

Vegan Beef Birria Tacos With Consume

Ingredients

Consume:

  • 4 guajillo chili’s

  • 6-8 California chilis 
  • 5 arbol chili’s 
  • 1 yellow onion, cut in quarters
  • 6 garlic cloves, minced
  • 2 cups chili water

Beaf Tacos:

  • 2 lbs Shredded GHK Beaf 
  • 5 cups vegan beef broth (veggie broth works too)
  • 1 tbsp adobo seasoning 
  • 1 tbsp garlic powder 
  • 1 tsp each salt and pepper
  • 1 tbsp oregano 
  • 1 cup water
  • 3 tbsp Avocado oil 
  • 1 non chicken bouillon cube 
  • 2 tbsp adobo 
  • 2 tbsp garlic powder 
  • 1 tsp Beef seasoning 
  • 2 tsp salt and pepper 
  • 2 tbsp mushroom seasoning 
  • 3 bay leaves 
  • Pack of corn taco shells 
  • 1 pack vegan Mexican cheese blend 
  • 1 bunch of cilantro 
  • 1 Chopped onion 
  • 3-4 tbsp Avocado oil 

 

Assembly:

  1. Add avocado oil to a dutch oven and open packs of shredded beaf . Once oil is hot, add your beaf to pot to give a quick browning and add your dry spices (adobo, garlic powder, cumin, salt and pepper, smoked paprika, beef seasoning). Cook for about 7-8 mins until seasonings are incorporated and beef has started to brown.  remove beaf from pot and set aside in bowl and prepare to start on consume.
  2. Cut off stems and de-seed each chili. Once your chilis are de-seeded, add your chilis, garlic and onion to boiling water until they are soft and pliable about 10 mins. Once they are done remove all the solids from the water but do not throw away boiling water. Add solids to blender along with some of the boiling water and season with adobo, garlic powder, oregano, and salt and pepper. Blend until smooth. 
  3. Add beaf back to the pan and add vegan beaf stock or veggie broth. Next add your blended chili sauce through a sift to seperate any random solids . Mix and add cinnamon stick to pot, bay leaves and season again with s&p, adobo, garlic powder, mushroom seasoning. Cook on low for about 40 mins- 1 hour. Taste and adjust seasonings as needed.
  4. Open tortillas and turn on skillet. Add avocado oil to skillet and tortillas to pan until soft and pliable after about 3 mins of frying add birria meat, vegan cheese and onions and cilantro and close each taco. Once cheese has melted in tacos spoon some of the consume sauce on top of the tacos to your liking. 
  5. Add additional consume sauce in small bowl and use as a dipping sauce for your tacos. Enjoy!
