Approved preparation

• Pieces can enter prepared gravy or sauce frozen or thawed.
• Approved method: add oxtails frozen or thawed to your prepared gravy and simmer until the rice-paper exterior is soft and gelatinous; frozen pieces need more time than thawed.
• Gravy context (owner guidance, variable yield): approximately 1 lb is roughly 14-16 pieces. Ready-made mushroom stock: no more than 1 cup, added gradually. For paste or bouillon, the owner specified 2 tablespoons of liquid, but the paste/cube amount and its concentration remain unspecified — check the product being used.

Storage
